Marrakesh

Description

Marrakesh at the spice stalls, where everything is measured out by hand. Cardamom and saffron open it dry and golden. The heart is the market itself — cinnamon, cumin and nutmeg, warm and faintly savoury, the cumin doing what only cumin does and giving the composition skin. Cedarwood, labdanum, leather and vanilla close it dark and resinous, the leather recalling the tanneries. Spiced, dense and unmistakably North African.
